果感豐富的酒。每方面表現也在中上的水平,但真的只是中上,即是說如果60分合格的話,它便樣樣70分,別期望80分。酒的口感很好,05年酒的單寧真的很軟熟,令人飲得很舒服的。餘韻亦令人回味,好味,只是複雜性少了點,但村酒來說是很好的。

酒整體其實是不錯的,但是酒味仍不開放,要吮好耐才可感覺到,否則味道會寡一些,所以在飲用角度便會覺得酒味複雜性不足了。酒香強但仍須時間發展似的,餘韻算長。這酒不太像這酒莊給我一貫的感覺,但酒的質素不錯的。

好味。酒香強而複雜,單寧強但成熟,複雜性在口中雖不及酒香,但仍有一定程度,再加上頗長 的餘韻,佐餐剩飲佳可。以牙擦蘇來說這酒的結構工整平衡,難得。

 這酒有點點問題,有點點CORK,但不太影響佐餐。酒的香氣很濃,仍很年輕的。花果味很重。餘韻算長,只是酒味在口中下跌了些。所以評價仍是一個問號,有待觀察。

Deep ruby with touch of haziness. On nose it has pronounced level aromas of mushroom, red plum jam, rose jam, toasted vanilla and touch of anise. Dry with medium acidity, medium alcohol and quite full bodied. Medium soft tannin but a touch of greenness is detected at the back. Higher than medium flavour intensity with flavours of red cherry, plum, rose jam, licorice and redberry jam. Fairly long length with red berry finish. (91) Jammy but a bit masking on its character.

酒的風格有點晦暗的,但不是不好飲。04年酒這樣濃真的令人難以想像。酒香又強。酒味濃郁,又有一定複雜性。餘韻亦算長,好好味。但有樣始終唔明的問題是:點解這莊04年的酒顏色是有點混濁的呢?

如果朝朝起身飲一啖這酒會幾醒神。清爽,直接,香氣強而表現出香檳應有的氣味,真的會把沉睡的人叫醒。酒在口中複雜性及強度下降了不少,餘韻算長,是一枝儘量保留果味的酒,不錯。

 甜酸平衡很吸引。酒香複雜,香氣較重乾果感,酒體厚重,但酸度令口感提升,不會覺膩,酒味也不錯,果味足,但礦物感消散了點,餘韻亦算長,好飲的,如果餘韻再長些會更好。

這酒有點令人無語。因為在各方面都紮實地展示給你看這酒的級數,強烈複雜的香氣一層層的展示出來,說明了他的深度。酒還年輕,單寧未完全變柔滑,但是會感到其成熟的。酒味強而複雜再加上長長的餘韻,在品飲方面沒有得挑剔。這酒不是有一些如 LEROY 或 LIGER BELAIR 般的濃艷,但來得優雅,平衡工整,酒體結實,難得一遇的好酒。只是在我的評分中,如酒味有轉變的話會再加分,但這酒是一直連貫的好味到尾,所以不能再比更多分,但這酒的評分我應該是比到最高的了。

出奇的好味。可能是我之前喝過一些較舊年份的而感覺一般,但這酒令我改觀了。足證近幾年這酒莊越做越好。酒香強而複雜,餘韻長,酒味高度平衡 ,口感濃郁,陳年能力仍有一段時間,好好味。

 四平八穩的好酒,各方表現也在中上水平,餘韻更是錦上添花的,好飲。酒的單寧仍很強,酒味多一些複雜性的酒將會更出色,但現在飲已經很好了。這酒還有頗長的適飲期。

酒香令人驚喜的,特別是迎面襲來的花香。 酒有點青,可能是年份問題吧,餘韻算長,酒在口中的表現下跌了些。看得出酒莊在這年份想做出濃郁的酒的苦心。酒整體還是不錯的,幾好飲。

用古巨基的口吻說:我真係好鍾意飲孖雞的 Chevalier Montrachet,強而複雜的香氣和酒味,綿長的礦物感,再加上木桶所產生出優雅而又有點刺沷激的香料味,引人入勝,好好飲,令人回味。有些酒莊的 Chevalier Montrachet 較有鮮爽的礦物感,但這枝較柔順一些,亦是一絕。

It looks like maple syrup in colour. On nose it gives medium intensity aromas of dried apricot, honey, orange, dates, prune and raisin, very fruity. It is sweet with high acidity, full bodied and less alcohol bite. The flavour intensity is over medium level with flavours of apricot, honey, prune, and raisin. Longer than medium length with prune finish. (92) good balance but needs complexity.

以TBA來說香氣不算強,酒香複雜性很好,只是在口中時複雜性不及酒香,餘韻很長,酒質是不錯的,更值得讚的是甜酸平衡很好。整體不錯,一枝合格的TBA,多點複雜性,特別是品種的礦物感會更好。

哈哈,再證明我品評的一致性,原來我今年2月亦試過這酒一次。評分也是一樣。但這次酒的轉變跟之前的分別不大,只是比半年前那枝更開放,香氣及酒味的複雜性更明顯地展示。好好飲的一枝酒,尚有一些發展,但現在飲已經好好味了。

翻查紀錄,原來約半年前試過這酒,發現我也是比相同評分,證明我的品評水評幾一致呢(刷下自己鞋先)。雖然同分,今次酒的印象比較重口了一點,這枝的表現較重味,果味轉了點黑果,也發展了點較重身的黑皮諾特色。其他品質參數變化不大,依然好酒一枝,再陳多十年多會是一枝今人回味的酒。

會令人有點驚嘆的複雜香氣,雖然不算太強,隱隱約約的滲透出來,幾誘人。酒體豐厚,酒力在口中強度比酒香強,但複雜性又不及酒香,餘韻算長,好飲,放多十年還可以的,慢慢陳年才品嚐吧。

酒的強度幾好,又有一定複雜性和生氣,加上較鮮的花果香,整枝酒的鮮活性很好,不太像此村的酒。也許是年份問題,單寧有點枝梗的感覺。餘韻尚算合格,酒味也有一點複雜,幾好飲,相信陳年一下更好。

(94) I think this one has some condition problem.Wonderful nose still.

 可能是酒的狀態有點點問題,酒的香氣很好,令人感覺有一定深度。餘韻長亦表現其質素,酒精感稍稍重了點點。問題在於口中,複雜度及深度跌得很快,甚至有點散。但整體仍是好飲的。我保留對這酒的評價,直至下次試枝狀態好些的。

這酒如果聞完之後因為酒香不強而放棄的話便是一個損失。酒香不強是事實,但複雜性很好。酒在口中味道平衡豐富,亦有一定鮮活性,礦物味亦足,餘韻算長,是一枝在口中表現比酒香還好的酒。讚。

This dry Bordeaux has deep intensity purple colour. On nose it has quite high intensity aromas of blackcurrant, black plum, mint, violet, blueberry jam and touch of licorice and earth. Medium acidity and alcohol, full bodied with medium fing-grained tannin, touch of stalky. The flavour intensity is over medium level with flavours of black berry, bell pepper, mint, and touch of licorice. Longer than medium length with black cherry finish. (91)

PALMER 永遠都可以造到一股誘人的香氣,雖則細心再聞之下會發覺沒有什麼驚喜。酒香好,口感不算太柔頫,酒在口中複雜性不及香氣,餘韻算長,幾好飲,以這冷冷的年份來說已很不錯了。

Deep ruby coloured with pronounced noses of rose, red plum, wild red berry, mint leaves, toast and touch of spice. It is dry with medium acidity, medium alcohol and fuller than medium bodied. Medium tannin as well with fine grained nature, a bit of greenness tho. On palate it has over medium intensity flavour of red plum, rose, licorice and cabbage.  估不到這牌子的紅酒也有這表現。果香很好,但以這特級葡萄園來說複雜性欠了點,餘韻亦算不錯。酒很可口,莓類果香令人飲得很開心的。

這酒開始的酒香說明了酒的木桶工作不錯,提升了酒香的強度及複雜性,這好處一直延至餘韻,可見造得不錯。酒的味道偏花草味多一點,口感有一點點寡,整體很不錯的餐酒。

Deep ruby coloured with close to pronounced level aromas of dried red plum, candied redberry, rose jam touch of vanilla and earth, it is dry with medium acidity, medium alcohol and fuller than medium bodied. Tannin is soft and ripe at medium level, together with a fairly long length. On palate it has over medium intensity flavour of red plum, tea leaves and rose pedal. (93). Maybe storage problem, weirdly a bit dull.

 這酒有點奇。聞時會感受到此酒厚重濃郁的果感,但就是只有果感加一點點香草味。酒在口中的鮮活性有點不足,即使是03年的也不應這樣。餘韻長,只是複雜性簡單了,以這葡萄園的酒不應如此的。希望是儲存問題吧。

礦物味很豐富,清香爽朗的。酒力強勁,亦有著白中白的綿綿口感,長長的餘韻。現在飲可以感受到酒的功架,但再多放一下相信會有更成熟複雜的口感。

Medium alcohol with creamy and mellow mouthfeel. On palate it has quite high intensity flavours of lemon, ripe apple, hazelnut, mineral and touch of caramel spice. Long length with nutty finish.  酒造得好,白中白的特色清楚直接,展現出釀造者的功力。酒質也很好,酒力很強,餘韻亦長,好好飲,應該慢慢品嚐的一枝酒。

這個廠而沒有煤泥的威士忌真的很少試到。酒香不錯,麥味重了點,口感亦豐滿,餘韻長。酒味似 SPEYSIDE 酒但口感似 HIGHLAND ,很有趣的,但亦幾好飲。

This dry red wine has deep ruby colour. On nose it has pronounced level aromas of blackcurrant, dusty earth, plum, licorice, violet and dried blueberry. Medium acidity and alcohol with full bodied and quite high ripe and fine grain tannin. The flavours contain blueberry, plum, warm brick, licorice and black tea, all about medium level. Fairly long length with blue berry finish. (94) Good fruit.

近二十年酒,但果味感覺仍然很濃厚,難得。酒香撲鼻,餘韻亦長,酒味亦有一定田土特色,好飲。酒的單寧仍強,但不算鞋口,相信還有發展空間。好酒來的。

酒香複雜強烈,口感柔滑豐厚,餘韻長,大熟大勇,好好飲。即使對酒認識不深的也會喝出這酒的質素。酒亦展現到一些田土特色。這酒莊的好處是會令人易於品飲,有陳年能力之餘亦可以早飲,好味。

 甜酸平衡有點走向酸的感覺。酒的強度不錯,酒香表現比酒味較好。餘韻亦長。由於有一定酸度,所以酒不算太膩。幾好飲,不錯的冰酒。

This whisky has medium intensity gold colour. On nose it gives quite high intensity aromas of citrus, peat, malt, honey and touch of caramel. Water brings out some floral notes. It is dry with medium acidity, medium alcohol and quit full bodied. Some wood tannin too. On palate it has quite intense flavours of honey, citrus, peat, floral and vanilla. Fairly long length with honey malty finish. (93)

Bunnahabhain 25 years old Single Malt Whisky

Medium copper coloured single malt whisky with quite intense noses of honey, caramel, toasted malt, asphalt and boiled lemon. You can feel the heat of the whisky. Water dilutes the aromas but brings out notes of road tar. Dry with medium acidity, quite high warming alcohol and quite full bodied. Touch of wood tannin is detected. The flavour intensity is at medium level with flavours of coal, peat, honey, malt and citrus peel Fairly long length with sweet malt finish. (91) Powerful.

可以用猛烈來形容。酒香已經令人感到有點熱力,香氣算強而有一定複雜性。酒在口中味道較簡單了些。酒精感強,有點烈。餘韻長。好 MAN 的。不錯。

 介乎花果與田土的平衡味道中,這酒頗誘人。強勁的香氣和酒味,長長的餘韻,再加上重的單寧,這酒似乎還有一段長時間發展。現在飲已經很不錯,好味道。陳多幾年會更好。

The tannin is quite high but ripe and fine grained. On palate it has over medium intensity flavours of black cherry, plum, black tea, and touch of vegetal and licorice.  比想像中好飲多了。酒經過了廿七年仍很濃郁。單寧仍強,餘韻長,如果複雜性高些會更好。另一方面要注意的是它強勁的單寧,酒可以多放一段時間,等待單寧馴化,但到時又要希望枝酒的味道不致散掉。現飲不錯,七年後相信仍可以。
