1995 Dalmore Single Malt Whisky (Lafite Barrel finished, bottled in 2017)

This single malt whisky has medium copper colour with some red tinge. It has close to pronounced level aromas of caramel, malt, dates and trace of ginger, orange peel, raisin and cedar. Water brings out some floral notes. It is dry with medium acidity, medium level well integrated alcohol, quite full bodied with oily mouthfeel. On palate it gives quite high intensity flavours of honey, ginger, nutty, bitter almond and trace of cedar. Fairly long length with dried fruit finish. (92) Keep changing.......

也是一個難得的品飲經驗。 如果說是受拉菲桶的影響，那應該是木桶味道有少少不正統的感覺，像是松木似的。 酒底像普通的單一麥芽威士忌，但背後有着一些生果和干邑的香氣，很特別。強度及複雜性也很好，在餘韻中更展現出較強的乾果感，很有趣。十分成功反映出紅酒木桶的影響，但似乎與拉菲沒有特別關係。

1969 Glenfarclas Family Casks Single Malt Whisky (Bottled in 2014)

This single malt whisky has medium gold colour. On nose it has close to pronounced level aromas of toasted malt, honey, sweet spice, grain, caramel, maltose and trace of ginger. Water brings out floral notes. It is dry with medium acidity, medium alcohol and full bodied. Touch of wood tannin is detected too. The flavour intensity is over medium with flavours of lemon, honey, toasted malt, ginger and caramel. Fairly long length with ginger malty finish. (93) Good nose.

以這樣陳年的酒來說，是交足貨的。木桶的影嚮很合適，不會太搶過酒的一些味道。酒的強度和複雜性也很好，餘韻亦算長。酒的香氣比口感吸引。這年份的酒我喝過不少，不同批次的分別也算明顯，所以很容易有不同品飲結果，但全都不會令人失望。

Kavalan Oloroso Sherry Cask Single Malt Whisky (知天命系列)

This dry whisky has deep intensity mahogany colour. On nose it gives quite intense aromas of raisin, dates, smoke, toasted seaweed and trace of maple syrup. Water enhances raisin sweetness but reduce others. Dry with medium acidity, medium alcohol and quite full bodied. On palate it has over medium intensity flavours of raisin, smoke, seaweed and touch of raw almond. Fairly long length of raisin finsih. (93) A bit over extraction and too oloroso.

 這支酒有着很重的口味，重得來似乎有點過火，雪利桶的表現 蓋過整支酒的表現，酒力強勁， 餘韻算長，酒的複雜性在口中不及酒香，整體濃濃的，重口味的作品。

 

1969 Teaninich Single Cask Single Malt Whisky (36 years old)

Medium gold in colour with quite intense aromas of grain, honey, smoke, weed and trace of malt, iodine and caramel. Water enhances its malty aroma. Dry with medium acidity, medium warming alcohol, quite full bodied with oily mouthfeel. On palate it gives over medium intensity flavour of honey, malt, almond, vanilla. Longer than medium length with honey and malty finish. A touch of bitterness at the back. (91)

像一款正統的舊制作威士忌。酒香不錯，有一定陳年感，口感厚厚，不嗆喉，酒味亦維持一定強度和複雜性，餘韻亦合格有餘，只是吞嚥後帶一丁點苦，未必人人喜愛，整體不錯，好喝的。

Medium copper colour with quite intense noses of raisin, dried malt, toasted spice, apricot and touch of smoke and ginger. Water enhances its smokiness. Dry with medium acidity, quite high in alcohol and full bodied. Fairly high flavours of honey, smoke, dried spice, toasted malt and touch of seaweed and ginger. Fairly long length with honey and nutty finish. (93)

這酒從木桶上抽取大量味道，很重身亦很重味，雪利酒的乾果甜口感覺，酒有點烈，入口亦頗豐滿，重口味之選，酒力強，亦複雜，餘韻不錯，很好的酒品。這酒跟之前的1977年同時品飲，對比很強烈，有趣。

This whisky has medium gold colour. On nose it gives medium intensity aromas of malt, honey, smoke, vanilla spice and touch of jasmine and seaweed. Water brings out floral notes. It is dry with medium acidity, medium alcohol and bodied with touch of wood tannin. Quite intense flavours of honey, sweet spice, vanilla and touch of floral. Fairly long honey and malty finish. 較為少木桶影響的一款酒，酒底不錯，有一定複雜性和陳年感，只帶著一點點的木單寧和泥煤，很純正的感覺，亦不覺重口味。酒在口中比酒香好，建議加一丁點水更佳，易入，輕鬆舒服的烈酒。

1984 The Golden Cask Caol Ila Single Malt Cask Strength Whisky (Bottled in 2014)

This dry single malt whisky has medium intensity gold colour. On nose it gives quite pronounced aromas of lemon, honey, smoke, malt, seaweed and touch of licorice and vanilla. Water enhances its maltiness. Medium acidity, quite high alcohol but integrated, and full bodied with oily mouthfeel. On palate it has over medium intensity flavours of honey, lemon, seaweed, pepper and touch of smoke. Fairly long length with lemon and honey finish. (93)

很多人覺得艾雷酒的酒香味不能接受，但接受的人又會很喜歡。但我覺得這裡的酒最精彩是酒香及酒味風格上的反差。酒香較重煙煄跟入口後的甜美形成一大對比，甚至給人驚喜。有風格、有強度和餘韻、亦有一定複雜性，好味。

1979 Signatory Strathisla Single Malt Single Cask Cask Strength Whisky (Bottled in 2016)

This whisky has medium copper colour. On nose it has quite high intensity aromas of honey, ginger, dried apricot, caramel, and notes of seaweed and smoke. Water brings our some tropical notes. It is dry with medium acidity, quite high in alcohol and quite full bodied. Touch of wood tannin is detected. Medium intensity flavours of citrus, honey, caramel, hazelnut and ginger. Longer than medium length with honey citrus finish. (92) Good and attractive nose.

OLOROSO雪利桶的酒那種香氣真的十分討人歡喜。酒香很好，強而複雜，加點點水果味更出，酒的口感豐富，餘韻亦長，好飲，不錯的飯後酒。

1990 Mackillop's Choice Macallan Signle Cask Whisky

Medium gold coloured single malt whisky with quite intense aromas of honey, toasted malt, cinnamon, dried hay, peat smoke, and touch of citrus peel. Water brings out touch of floral notes. Dry with medium acidity, medium integrated alcohol, medium bodied and some wood tannin. Smooth mouthfeel. On palate it has over medium intensity flavours of honey, lemon, licorice and ginger. Fairly long length with honey and malty finish. (92)

像一些舊一點的麥卡倫，果味不及木桶的強，較猛較烈的感覺。酒香複雜性不錯，餘韻算長，幾好飲，但喜歡較多果味的可能失望。

Medium gold in colour with quite high intensity aromas of malt, honey, lemon peel, cinnamon, sawdust and ginger. Water gives our tropical fruit aroma.  這酒的陳年感很不錯，飲時是感受到酒從木桶中提取了很多味道似的。酒香及酒味的強度和複雜性也是中上水平，餘韻很長，令人回味。好飲。這酒可以說是
REFILL SHERRY CASK 的一個很好的例子。

A medium gold coloured single malt whisky with quite high noses of roasted grain, lemon peel, cinnamon, vanilla, honey and touch of caramel. Water enhances its honey note. Dry with medium acidity, quite high warming alcohol and quite full bodied. The flavour intensity is over medium with honey, malt, lemon peel, vanilla, cinnamon and touch of coffee. Fairly long length with lemon and spicy finsih. (92)

酒的強度不錯，複雜性有點點不足，令到酒精感突出了點點。酒在口中的成熟感反而更明顯，餘韻算長。以品質來說尚算符合一枝三十多年的威士忌，但用這價錢則有很多比它更好的選擇。

 酒香不錯，加點點水會更香。有著蒸餾廠的剛烈風格，餘韻亦算長，味道傾向傳統的穀物甘甜味，沒太強花果風味。酒在口中複雜性欠了點，所以有點寡。整體幾好飲，但不會是一個很大路，很多人喜歡的酒。

1970 Glenfarclas Single Cask Single Malt Whisky

This whisky has medium intensity mahogany colour. On nose it gives medium intensity raisin, apricot, dried plum, date and touch of smoke and hay. Water enhances its fruitiness. Dry with medium acidity, quite full bodied with higher than medium warming alcohol. Touch of wood tannin detected. The flavour are at over medium level with flavours of raisin, grain, caramel, honey, apricot and touch of malt. Fairly long length with honey raisin finish. (92)

只聞酒香的話很難分別出這是威士忌還是拔蘭地。這酒很易試到是由初次雪利桶做陳年的。果味十分濃厚，有點過度濃厚，蓋過了威士忌的麥芽及煤泥風味，餘韻長，亦展現一點陳年感，酒精感重的，但因酒味濃而不致於有很辣的感覺，幾好味。

Gordon & Macphail Tomatin 1995 Single Cask Single Malt Cask Strength Whisky (bottled in 2015)

Medium gold coloured with fairly high intensity aromas of malt barley, toasted vanilla, lemon and touch of pineapple. Water enhances it tropical character and gives out some coconut notes. Dry with medium acidity, quite high warming alcohol and medium bodied. On palate it has over medium intensity flavours of malt, coconut, honey and banana. Longer than medium length with toasted nut finish, .(92)

感覺帶點野性的威士忌。酒香強而複雜，加水後更易感受到波班桶的特色。一樣有著單桶威士忌那強勁的酒精，但不算辣 。酒在口中的複雜性少了點，但仍不錯，餘韻亦長。飲時令我有在火爐邊看書的感覺，好味。

Gordon & Macphail Glenburgie 1995 Single Cask Single Malt Cask Strength Whisky (bottled in 2015)

A medium gold coloured single malt whisky with very high intensity aromas of honey, grain, orange, vanilla, spice and touch of mint. Adding water brings out its maltiness and some tropical fruit notes. Dry with medium acidity, quite high warming alcohol and quite full bodied. Touch of wood tannin is detected with over medium itensity flavours of lemon, honey, toasted spice and banana. Medium length with citrus and peppery finish. (92)

比當日試酒板時好，證明開瓶後透透氣會有多一點表現。單桶酒的酒精一般較強，加少少水更多香味，酒香的複雜性也不錯，酒體滿滿的。酒在口中的複雜性少了些，餘韻亦比想像中短了點，但回味有些複雜性，不錯。配餐或剩飲也可，但建議落少少水會更香及更易入口。

1977 Glen Scotia Single Malt Single Cask Cask Strength Whisky

This is a medium gold coloured single malt. On nose it has fairly high intensity aromas of malt, smoke, iodine, and touch of citrus peel, honey, vanilla and coconut. Water enhances its floral note. It is dry with medium acidity. Medium integrated alcohol with fuller than medium bodied. The flavours contain malt, citrus peel, vanilla and touch of tropical fruit, at slightly higher than medium level. Quite long length with caramel malty finish. (92)

酒有點陳年感，但亦可能是這陳年感令枝酒有一定質素。酒的大部份味度似乎都是由木桶來，令到酒有點點過度木桶的感覺。

Nikka 25 year Single Cask Whisky 余市25年單一木桶原酒

This whisky has medium gold colour and medium intensity nose of floral, caramel, honey, vanilla and coconut. Water enhances peaty and floral notes. It is dry with medium warming alcohol. Medium bodied and higher than medium flavour intensity. Flavours contain pineapple, honey, floral and touch of grain. Fairly long length with tropical fruit finish. (91) Bit heady but good complexity.

酒的複雜性不錯，餘韻亦佳，酒精感也強但亦有點轉醇厚的感覺，在口中的果味不錯，正的。

Nikka 15 year Single Cask Whisky 余市15年單一木桶原酒

A single case whisky with medium copper colour and fairly high intensity aromas of peat, pinesol, malt, honey, caramel and touch of walnut. Water gives some floral notes. It is off-dry with quite high warming alcohol. Fuller than medium bodied with touch of wood tannin. On palate it has fairly high intensity flavours of grain, floral, honey and peat. Barely over medium length with malty finish. (90) Good complexity but short length, alcohol sticks out too.

酒香不錯，口感也好，有複雜性之餘濃度亦足。可是餘韻出奇的短，酒精感亦較突出，扣了些分數。

1971 Longmorn SIngle Malt Whisky

A medium amber coloured whisky with quite pronounced noses of pinesol, seaweed, smoke, iodine and malt. With water the peaty note is enhanced. Dry with medium acidity and integrated alcohol. Medium bodied. The flavour intensity is fairly high with flavours of peat, iodine, citrus, hay and smoke. Long length with peat and citrus finish. (91) Good  and straight but a bit single dimension.

1978 Highland Park Single Malt Whisky

This single malt whisky has medium copper colour and thick legs. On nose it gives medium intensity aromas of honey, jasmine, malt, hay, citrus peel. With water the floral and citrus notes are enhanced. Dry with medium acidity and medium warming alcohol and touch of wood tannin. On palate, it has higher than medium intensity flavours of honey, citrus, malt, smoke with touch of earthiness. Fairly long length with grainy finish. (91)

以HIGHLAND PARK來說這是一個交到貨的威士忌，但不是一個有令人驚喜的酒品。有一定複雜性及餘韻，好酒一枝但不算太突出，隱約的煤泥味亦令酒有一定的層次，不錯的酒品。
