2003 Il Paradiso Brunello di Montalcino

Deep ruby with quite intense noses of dried plum, dried raspberries, raisin, dates, smoke and toasty oak, it is dry with medium acidity, medium alcohol and quite full bodied. The tannin is ripe and soft at medium level. On palate it gives over medium intensity flavours of ripe cherry juice, dates, toasted licorice and smoke. Long than medium length with cherry juice finish. (92) typical and ripe, feel the warm and heat of the fruit ripeness.

接近夏天的感覺,很熟很濃的果感,似乎你00咁年全個歐洲所都好熱咁。果味濃郁、單寧成熟,餘韻算長,好喝的。複雜性尚算不錯,但被果味掩蓋不少,但仍感受到品種的特色,希望發展一下,應該更好。

2008 Salon

Medium lemon green colour with pronounced aromas of lemon, yeast, ripe pear, apple juice, steel and mineral, very fresh and fruity. It is dry with medium refreshing acidity, medium alcohol and bodied. Creamy mousse with touch of steely mouthfeel. On palate it gives quite intense flavours of lemon, steel, ripe pear, apple, mineral and wet stone. Fairly long length with lemonade type finish (94)

難得的酒,也是難得的品飲經驗。似乎2008年的香檳是一個頗特別的年份,給我的感覺是可以早一點飲用。這感覺可能是來自酒的酸度感。試過幾個不同酒莊,他們的香檳酸度一點也不削,再加上成熟甜美的果感,令人愛不釋口,不斷咁飲。這酒也是一樣。酒的表現全在中上,礦物感在口中較為突出,好好喝的酒。

Bollinger PN15 Champagne

Medium lemon green colour and medium noses of lemon, red apple, steel, mineral and bread. Quite acidic but soft in nature, medium alcohol and bodied with firm structure, nice expression of pinot noir. Over medium intensity flavours of bitter lemon, apple, mineral, steel and touch of honey. .Fairly long length  with bitter lemon finish. (92) Fresh.

可以一個字去形容,說是鮮!酒很鮮爽,造工可以說是飲得出咁公整,口感更有著接近標誌性的 BDN 感覺,拎去考酒試用一流(一笑)。酒的整體表現中上,餘韻算長,好喝,是一枝很稱職的香檳,不論用作佐餐或剩飲,頭盤或甜品也可。

1986 Ch. Ausone

A deep ruby coloured dry red wine with intense noses of black plum, mint, vegetal, licorcie, pine and smoke. Medium acidity and alcohol, full bodied but still quite intense tannin, fine grained in nature. On palate it has over medium intensity of red plum, mint, vegetal, licorice, vanilla and trace of smoke. Fairly long length with red plum finish. (94)

三十幾年酒仍有著強烈的黑果感,酒的發展是成熟的,複雜性也很好,餘韻亦長,但單寧仍強。我會判斷是適飲狀態,再放多一段時間可能可以令口感更柔順,但酒味發展亦要考慮一下。酒是好酒來的,濃郁之選。
