酒、味、疑雲

前言

這一切,應該是由我生日那天説起。

 
2014年8月在我生日當天,
我在想著今年可以給自己做一點什麼有趣的事情。對,這是我自己的一種神經病;久不久會想作一些什麼怪怪的事。我決定公開我的品酒筆記及開部落格也是幾年前生日時的一個想法。

千頭萬緒,想著想著,也不知道要做些什麼。
也許近年我的生活相當愜意,人亦開始有點缺乏刺激。回想到自己的酒路歷程,我由一頭只懂盲飲的牛,漸漸學會品嚐、欣賞、甚至去了解酒類的味道及其背後的知識文化和歷史,期間我碰過不少志同道合的酒友,亦從他們身上學到不少對酒的見解,甚至學到他們做人的技巧和人生哲理,這些種種都帶給我難以言喻的歡樂和趣味。於是我想到我不妨寫一篇長文作記錄。可是由於我所見所學的仍十分雜亂,頗難整理到一個中心思想。再者,一篇冗長的文章亦會大大降低可讀性。因此一直未有進一步的構思和行動。

直至早陣子。


也得說:契機,往往出現在你估計不到的時候。一季新來的流感潮,
把身體尚算健康的我打跨了。流感把我困了在家好幾天。疾病帶給我的痛苦主要不是身體上的,而是精神上的。吃藥後弄得我四肢無力、頭暈眼花,把我這個愛「通山跑」的人綁在床上,對我來說真是一個打擊。當我意識模糊的臥在病榻時,突然腦海中閃出了一個訊息:寫個短篇小說吧!!!其後的數小時內,我的腦中不斷翻起不同的片段:我的一些往事、我學習過的葡萄酒及酒類資訊、我看過的書、我認識的朋友和「酒腳」、甚至我工作上所遇到的人和事,以及我酒聚時的歡樂氣氛。更奇怪的是,我腦海中甚至乎巳經出現了故事的大綱!
 
曾經在書展的分享會上聽到倪匡的一席話,
他説寫小說最重要的事就只有一個字:寫。不理會靈感、不要理會內容節理、不用理會任何事情,只需要揮筆寫。就這樣,出現了這一個小說。

小說內包含著我對酒類飲品的一些認知,
也包括著一些我對飲酒態度的睇法,更有著一些與酒無關的分享。由於很多酒類的名稱及術語並未有令人滿意的譯名,為求讓讀者更易明白,這故事是會中英混雜,亦會加上市井俚語。畢竟這只是網上玩樂的作品小說,我想彈性應該較大的。希望大家不要介意,但求看得開心便可以了。

Medium lemon coloured with fairly high noses of lemon, vanilla, hazelnut, honey, white flower and touch of wet stone and mineral, it is dry with medium acidity, alcohol and bodied with slightly over medium intensity flavours of citrus, vanilla, honey, mineral and trace of amber. Longer than medium length with honey lemon finish. (91)

這酒莊的性價比真的不錯。酒香及酒味貫徹其田土風格,強度和複雜性也在中上水平,餘韻亦算長。可能是年份關係,酒的果味重而熟,鮮活性好像差了點點,但已十分可口。

1969 Tomintoul Speyside Single Cask Single Malt Whisky Cast Strength 44 Years Old

A single malt whisky with medium amber colour. On nose it has pronounced aromas of malt, jasmine, caramel, honey, vanilla, walnut and touch of orange peel. Water enhances its floralness and fruitiness. Dry with medium alcohol, a little bit harsh. Quite full bodied and medium acidity. Fairly high intensity flavours of citrus, honey, jasmine, almond and grain. Long length with citrus and floral finish, (94)

四十幾年酒的酒精感有點點烈,不知是否倉儲問題,加少少水會好好多。酒是好的,濃、烈、複雜性高,酒在口中芳香馥郁,餘韻長,亦有一定陳年感和規模,好酒,但須要開一開才好飲的。

2000 Donnhoff Oberhauser Brucke Riesling Auslese

This sweet wine has medium gold colour and pronounced aromas of honey, mineral, petrol, peach, ripe mango and apricot. The sweetness level is at medium sweetness. Full bodied and medium acidity, lower than medium alcohol. On palate it gives barely over medium intensity flavours of lemon, peach, tropical fruit, mineral and touch of gasoline. Fairly long length with honey lemon finish. (92) A bit lack of acidity.

濃郁的酒香夾著品種本身的石油味,果香與礦物感並存。不論在酒香或酒味也有一定的複雜性,其他方面也算中上,只是酒的酸度低了點,酒的鮮活性差了點點,令人感到酒膩了點點,否則會更好。

1984 Ch. Haut Brion

Deep purple coloured with almost pronounced level intensity aromas of black plum, bell pepper, graphite, earth, mint and ripe blueberry, it is dry with medium acidity, alcohol and bodied. Still quite high tannin level but a touch of greenness is detected. On palate it has slightly over medium intensity flavours of black cherry, bell pepper, licorice, earth and touch of dust. Longer than medium length with blueberry finish. (93)

可口好飲。有著GRAVE酒區的風土性。酒香仍強而複雜,發展成熟。單寧有點點枝梗味但不太礙事。酒在口中簡單了點,酒的強度也跌了點,餘韻也不錯。

1994 Vosne Romanee 1er Cru Cros Parantoux, Domaine Emmanuel Rouget

A deep ruby dry red wine with fairly high intensity noses of red plum, rose, cabbage, menthol, pine and British tea. Medium acidity, alcohol and bodied with fairly high ripe and fine grained tannin. The flavour intensity is slightly higher than medium level with flavours of red cherry, licorice, vegetal and touch of cabbage. Long length with red plum finish. (93)

原先只是想比92分,但因為它的餘韻令我比93。酒的強度好,由聞至飲都有一定的強。複雜性來說酒香比酒味出眾,只是酒味在口中"標準"了點,沒有它的96或99年般的層次變化。好飲,以這年份來說是一枝年代佳釀。

1996 Richebourg, Domaine Leroy

This dry red wine has deep ruby colour. On nose it gives pronounced aromas of ripe red berry, mint leave, rose perfume, nutmeg and mushroom, complex and noble. It is dry with medium acidity, alcohol. Quite full in bodied with fine-grained medium tannin. On palate it has fairly high intensity flavours of rose, red cherry, plum, clove, mushroom and touch of tea. Fairly long length with redberry tea finish. (94)

有一些酒的酒香是可以做到強而高貴優雅,複雜性亦很好。酒力強勁,餘韻長,難得的好酒。酒在口中仍保持著其強度和複雜性,很濃烈,只是欠了點層次感。但已經令人一再回味了。

2009 Montrachet, Joseph Drouhin

This is a dry white wine with medium intensity lemon colour. On nose it has pronounced noses of citrus, peach, honey, white flower, amber and touch of hazelnut, vanilla and warm stone. Medium acidity and alcohol. Quite full bodied with fairly high intensity flavour of floral, pear, honey, vanilla and mineral. Close to long length with honey lemon finish. (93)

一枝香醇的白酒。酒香強勁複雜,餘韻亦長,酒味的強度仍然不俗,只是複雜性稍遜了點。酒在口中口感頗豐盈,令人一再回味,好飲。

Ulysse Collin Les Maillons Rose de Saignee Champagne Extra Brut

Fairly deep pink colour with quite high intensity noses of red berry, rose and traces of citrus, mineral, banana and toast, quite fresh. It is dry with quite high acidity, medium alcohol and slightly fuller than medium bodied, creamy mousse. The flavour intensity is quite high, with flavours of red cherry, yeast, raspberry, and touch of mineral. Medium length with raspberry finish. (91) Good red fruit.

這酒最值得欣賞的是它保持了很好的紅色果實感,而且感覺非常 新鮮。酒力亦頗強,複雜性也不錯,只是餘韻短了些。整體來說很可口的一款香檳,鮮、爽、充滿果味,令人飲得暢快。

2004 Echezeaux, Domaine George Jayer by E. Rouget

A fairly deep ruby colour dry red wine with quite high intensity aromas of red plum, red cherry, cabbage, rose perfume, and touch of vanilla and mushroom. It has medium level acidity and alcohol, medium bodied too. The tannin is barely at medium level and soft in nature, a little bit green tho. On palate it gives over medium intensity flavours of red wild cherry, rose perfume, cabbage, mushroom and touch of smoke and tea leave. Medium length with red cherry finish. (92) Clean and fresh, a bit exotic too.

 高貴優雅的香氣,有著一定的強度及複雜性。口感柔順,但感到少少單寧的青澀。酒在口中的強度也不錯,複雜性仍能維持,只是餘韻給我的感覺短了點,否則會給與更好的評價。

Talisker 10 years old Single Malt Whisky

This single malt whisky has medium intensity copper colour. On nose it has quite high intensity aromas of seaweed, honey, citrus, peat and smoke. Water enhances its smokiness. It is dry with medium acidity and warming alcohol. Fuller than medium bodied as well. The flavour intensity is at medium level with flavours of honey, citrus, seaweed and smoke, quite consistent, with medium length of honey and smoky finish. (90)

酒很工整,有著舊風格的味道,煙燻味的份量足,與酒的果味並行,酒香強,亦有一定複雜性,只是酒味在口中時力度及複雜性也下降了點,餘韻也算合格,幾MAN,亦幾直接的一款酒。

Martell 3 Star Cognac

This old cognac has medium copper colour. On nose it has almost pronounced aromas of raisin, apricot, jasmine, orange peel and touch of chalk. Water enhances its floral aroma. Off dry with medium acidity, medium integrated alcohol and fuller than medium bodied. On palate it gives slightly over medium flavours of citrus peel, prune, touch of caramel, raisin and jasmine. Longer than medium length with prune finish. (91)

這些舊酒真的拍得住現今的XO級數。酒的陳年感充分,比起一些現在的普通XO更有過之而無不及。只是原酒的複雜感可能有點不足,所以整體的複雜性差了點點,但仍有頗強的酒香和複雜性,餘韻亦合格有餘,已經不錯了。

2004 Ch. Montrose

A deep purple coloured dry red wine with fairly high intensity aromas of blackcurrant, black plum, smoke, and traces of bell pepper, mint, damp earth. Medium acidity and alcohol with quite full bodied. Fine grained medium tannin but a bit stalky is detected. Medium flavours of black cherry, earth, bell pepper and plum. Medium length with black berry finish. (90)

 貫徹著MONTROSE的特色,酒香算強勁,複雜性也不錯。可能是年份關係,單寧有點點枝梗感。而酒在口中的表現不論在力度或複雜性方面比較差了點,餘韻合格,整體不錯,但以此酒莊功力應該更加好。

Kelt Tour du Monde X.O. Grande Champagne Cognac

A cognac having medium copper colour and pronounced intensity aromas of jasmine, orange peel, raisin and touch of caramel and chalk. Water brings out floral notes. It is off-dry with medium acidity, warming medium alcohol and medium bodied. Touch of tannin is detected. On palate it gives medium intensity flavours of jasmine, orange and raisin. Fairly long length with jasmine and orange finish. (89)

像是一枝普普通通的XO。聞比飲好,複雜性也是酒香好點,酒有一點點陳年感。最值得讚是餘韻,有一定長。其他表現沒有什麼特色,可能是酒底的質素吧。
