2005 Clos de Beze, Domaine Prieur Roch

Deep ruby with pronounced level aromas of candied cherry, plum, rose jam, sweet vanilla, damp earth and trace of licorice. It is dry with medium acidity, medium alcohol and quite full bodied, soft ripe medium tannin too. The flavours have all the characters of that of the aromas with close to long length and black plum finish. (94)

這莊的酒那種濃烈的醬果感已經不用多說,除此之外還有著一定複雜的香氣,一路貫徹直至吞埋落肚,酒味仍是醬果主導。可以說是果香強勁,要多一些更平衡的酒風睇怕要多一定的陳年時間,否則只適合一些追求爆果感覺的人。酒的質素是高的,不過我會喜愛它發展多一點的層次。

Tesseron Great Smoker

Medium copper in colour with medium intensity of prune, dates, honey, dried apricot, peach and trace of limestone and jasmine. Water brings out floral notes. It is dry with rather low acidity, medium alcohol and  quite full bodied. On palate it gives over medium intensity of lemon, jasmine, toasted walnut and caramel flavours. Longer than medium length with citrus and jasmine finish. (93) Pretty complex.

頗有趣的,酒是有不錯的複雜性,是徘徊在花果及堅果之間的味道,酒的強度並不是很特出,但是酒味在風格上的遊走已經令人覺得有趣。好好玩似的。酒的口感醇厚,餘韻比想像中短了點,整體是一枝很不錯的酒。

1995 Dalmore Single Malt Whisky (Lafite Barrel finished, bottled in 2017)

This single malt whisky has medium copper colour with some red tinge. It has close to pronounced level aromas of caramel, malt, dates and trace of ginger, orange peel, raisin and cedar. Water brings out some floral notes. It is dry with medium acidity, medium level well integrated alcohol, quite full bodied with oily mouthfeel. On palate it gives quite high intensity flavours of honey, ginger, nutty, bitter almond and trace of cedar. Fairly long length with dried fruit finish. (92) Keep changing.......

也是一個難得的品飲經驗。 如果說是受拉菲桶的影響,那應該是木桶味道有少少不正統的感覺,像是松木似的。 酒底像普通的單一麥芽威士忌,但背後有着一些生果和干邑的香氣,很特別。強度及複雜性也很好,在餘韻中更展現出較強的乾果感,很有趣。十分成功反映出紅酒木桶的影響,但似乎與拉菲沒有特別關係。

1969 Glenfarclas Family Casks Single Malt Whisky (Bottled in 2014)

This single malt whisky has medium gold colour. On nose it has close to pronounced level aromas of toasted malt, honey, sweet spice, grain, caramel, maltose and trace of ginger. Water brings out floral notes. It is dry with medium acidity, medium alcohol and full bodied. Touch of wood tannin is detected too. The flavour intensity is over medium with flavours of lemon, honey, toasted malt, ginger and caramel. Fairly long length with ginger malty finish. (93) Good nose.

以這樣陳年的酒來說,是交足貨的。木桶的影嚮很合適,不會太搶過酒的一些味道。酒的強度和複雜性也很好,餘韻亦算長。酒的香氣比口感吸引。這年份的酒我喝過不少,不同批次的分別也算明顯,所以很容易有不同品飲結果,但全都不會令人失望。

2014 La Tache, Domaine de la Romanee Conti

A deep ruby coloured dry red wine with pronounced aromas of rose pedal, raspberry, redberry jam, strawberry field, smoky spice, earth, trace of mushroom and meat, very complex. Medium acidity, alcohol and quite full bodied. The tannin is at medium level, fine grained but a touch of greenness. On palate it gives quite pronounced flavours of raspberry, strawberry, rose tea, earth, mushroom and meat. Long length with raspberry finish. (94) Fresh, juicy with full complexity at the back. Very enjoyable, tho it still has long way to go.

 好好飲。早喝這類酒一定是充滿鮮果的感覺。酒有著混合各種情況的果實感,由野果到熟果到醬果都齊,此外再加上一層層的香料複雜性,引人入勝的酒味。餘韻亦長,味道範圍很廣,令人喝得陶醉,唯一是年份問題,單寧有點點青,希望時間可以幫到一下。現在飲已經很好,不過相信放下會更精彩。

1996 Cristal Vinotheque Rose

This dry rose champagne has medium intensity lemon colour with ruby tinge. On nose it has pronounced aromas of strawberry, red apple, lemon, steel, rose pedal and garden like floral aromas. Medium acidity with touch of sharpness, medium bodied and alcohol and creamy mousse. The flavour intensity is quite high with flavours of strawberry, apple, steel, rose, raspberry with touch of chalk and coffee at the back. Fairly long length with apple finish. (96)

 同酒莊同水平的一同試,粉紅香檳給出了另一個風格。酒的強度及複雜性已經不用多說,酒的酸度足,而且有著這酒莊給我的印象那種尖削感。酒味因粉紅香檳關係多了紅果的特色,這特色在口中轉化多了一種微微的、像成熟紅酒的感覺,是另一種風味。很特別的品飲經驗。無得頂。

1996 Cristal Vinotheque

Medium lemon in colour with lemon attack and pronounced noses of honey, ripe apple, bread, mineral, steel and touch of caramel cream at the back. It is dry with over medium intensity but soft acidity, quite full bodied with medium alcohol and creamy mouthfeel. On palate, it gives quite intense flavours of honey, chalk, steel, red apple, mineral and trace of saline. Long length, very delicate and fine but concentrated in flavours. (96)

 優雅得來而有著強勁的酒味,直係一D都唔易㗎葉師傅。這酒的香氣由一倒酒已飄來,聞起來層次和強度鮮明,酒的酸度不太有著以前的尖削感,而是較柔順。酒味強、口感豐滿,很好喝。酒在口中仍有著其複雜性,餘韻長,一流的表現。是一枝難得的佳釀。

1989 Vega Sicilla Unico

A deep ruby coloured dry red wine with quite intense aromas of black plum, black cherry, raspberry, dried strawberry, prune, dates, sweet vanilla and licorice, quite jammy. Medium acidity and alcohol, full bodied with over medium tannin. The flavour intensity is quite high with flavours of black plum, strawberry jam, vanilla and warm earth. Long length with dried plum finish. (93) Too rich and full.

這些酒的口感真的很濃,強強的乾果口味,很重口。這表現了酒力的強勁 ,餘韻長長,力量型之選。有著這樣的醬果感,有點膩。已經三十多年仍有這表現,真的可以陳很夠,熟優熟劣真是見人見智了。好喝的,但不會令人不斷的斟來喝。

1990 Clos Des Lambrays, Domaine F & L Saier

Deep ruby coloured with over medium intensity noses of black cherry, rose, earth, licorice, damp wood and touch of mint leaf, it is dry with medium acidity, medium alcohol and bodied. Soft ripe tannin at medium level with medium intensity flavours of black cherry, licorice, tea and hints of hay. Fairly long length with black cherry finish. (91) Good mouthfeel but  bit simple on palate at this level.

較重的泥土方面的表現,但仍存在著一定的花果香。酒的發展已成熟,口感很好,酒的複雜性在口中不及酒香,餘韻亦長,是一枝中上水平的酒品。好喝。

2011 Chambertin, Domaine Denis Mortet

Deep ruby coloured dry red Burgundy with close to pronounced noses of ripe black plum, mint, sandalwood, rose perfume, cedar, very subtle but long lasting. Medium acidity and alcohol, full bodied with soft medium tannin. On palate it gives quite intense flavours of black plum, rose, sandalwood and vegetal notes. Long length with black plum finish. (93) Very good nose.

這酒進引人入勝的是他的酒香 , 不單只複雜,而且強勁,有部份香氣是隱隱約約的,很誘惑。酒身重,酒我在口中維持其強度,直至餘韻也是長長的,值得讚賞的酒力。只是口中的複雜性不及酒香。酒還年輕,仍有一段長路,想信發展一下便會更好。
