好酒,條理分明,味道清澈、酒力強勁,在陳年感覺與鮮爽口感中平衡有致,喝得出酒的工藝,好好喝,是一支高水準的酒品。如果一定要彈的站可能是餘韻,希望可能長一點⋯⋯

Medium intensity lemon green coloured with intense aromas of bread, lemon, honey, candied apple and touch of limestone. It has medium acidity and alcohol, full bodied and creamy mousse. On palate it gives quite intense flavours of lemon, honey, floral, mineral and limestone. Fairly long length with honey lemon finish. (92) Balance in flavours, interesting.

如果用一碟食物嚟講就簡直是一個小炒王。酒的各種味道十分平衡,是每一種味道都是一樣強度的那種平衡,很有趣的一支香檳。酒的力度很強,以複雜性來說都是中上,但不是很複雜,餘𩐳亦不錯,好喝,亦幾特別⋯⋯

Medium intensity salmon coloured dry rose champagne with quite intense noses of strawberry, lemon, red apple, tomato bread, steel, wet stone and chalk. It is quite acidic but refreshing. Medium bodied and alcohol, creamy mouthfeel. On palate it gives over medium intensity flavours of red cherry, tomato, red apple, limestone and citrus peel. Longer than medium length with red sour cherry finish. (95) Fresh and crisp, good fruit.

感覺清新,果味新鮮,有點像剛剛從樹上摘下來的感覺,而且在果味背後還有一定的礦物感,很平衡和有層次的一支酒。酒的酸度足而且很醒神,不會削口。泡沫豐富,餘韻算長,但比想像中短了一點,可能酒在口中的表現令我有更高的期望,是一支很好看的香檳⋯⋯

Medium lemon colour champagne with quite intense noses of lemon, red apple, mineral, steel, limestone, good minerality, it is dry with medium acidity, medium alcohol and bodied with creamy mousse. On palate it gives over medium intensity flavours of lime, chalk, green apple, mineral. Pretty firm structure and over medium length with lime and chalky finish. (93) Good character and structure, very Pinot Noir

酒的強度很好,難得的是酒的礦物感很強,與本身的花果味建構出一個很好的骨架,口感較有棱角,同時亦有滿滿的泡沫,令人在入口及吞嚥下時的口感不同,有個性的黑中白

在不尋求複雜性的情況下,這香檳是很不錯的選擇。花果味足、亦有礦物感。口感滿滿的,餘韻亦算合格。只是酒味比較簡單了一點,是一支喝得開心的香檳

Bouquin Dupont Fils Grand Cru Blanc de Blanc Champagne

A medium lemon green coloured champagne with close to pronounced level aromas of lime, mineral, steel, yeast and touch of elderflower, apple and lactic acid. Dry with medium refreshing acidity, medium alcohol and quite full bodied. Creamy mouthfeel too. On palate it has over medium intensity flavours of lemon, mineral yeast, wet stone. Fairly long length with lemon finish. (92) Straight and concentrated, nicely made.

酒的強度很好,味道爽朗直接,香氣的複雜性很不錯,口感豐滿,亦有一定礦物感,可以喝得出是白中白,餘韻亦算長,是一支中上水準的香檳,好喝。

一支二十年的香檳,居然有這樣新鮮感,很難得。清澈、明亮、條理分明,酒力強而有一定複雜性,加上長長的餘韻,是一支佳釀。那種鮮爽的果味在口中相信會令人難忘。好好喝。

2008 Louis Roederer Cristal

This champagne has medium lemon green colour. On nose it has pronounced noses of lemon candy, peach, red apple, limestone, very clean and precise. It is dry with medium soft acidity, medium alcohol and quite full bodied with creamy mouthfeel. On palate it give over medium intensity flavours of lemon, limestone, pear, red apple juice and touch of chalky. Fairly long length with lemon juice finish. (95) Fresh, precise, clean and good range of flavours, but greener than last time I tasted.

保持着一貫的清爽,精準風格。酒的強度及複雜性也很好。條理分明、口感豐盈,酒在口中的表現比香氣更清爽,與上一次喝的感覺不同。上一次生果的感覺比較成熟,但這次的並不一樣,很有趣,一支仍在發展中香檳,很期待下一次再喝的感覺。

香氣強勁澎湃,亦有複雜性,酸度比較柔和一點,並沒有以往那麼重蘋果酸的感覺,酒在口中的複雜性低了一點點,但長長的餘韻提醒你他的質素,很好喝的。現在喝似乎還需要透氣一會。

A medium lemon coloured dry champagne with pronounced noses of apple, lemon, honeysuckle, wet stone and touch of cream. It is dry with over medium intensity acidity, quite full bodied with creamy mouthfeel. Medium alcohol tool. On palate it gives fresh lime and lemon, green apple, chalk and steel. Medium length with lime finish. (90) Clean and fresh.

沒有了BOLLINGER的醇厚感,換來了清爽的感覺,再加上實淨的礦物感,變成了一枝清脆干淨,條理分明的香檳。餐前吹水飲用一流,酒的果感同礦物感並行,餘韻亦長,是一枝有質素的酒,好喝的。

Medium intensity salmon like colour with close to pronounced noses of red cherry, strawberry, steel and layers of plum and red apple, very fruity. It is dry with medium acidity, medium alcohol and quite full bodied. Creamy mouthfeel as usual with quite intense flavours of red apple, cherry, strawberry and touch of mineral and steel. Fairly long length with red cherry and lime finish (91)

非常非常生果的一枝香檳,少了以往KRUG的那一種像木桶似的醇厚感,礦物味充足,紅果感強烈,口感因泡泡及豐富果味變得豐滿,是一枝很適合追求的爽快直接的香檳飲家,這檳佐餐剩飲也可,好味,亦喝得很爽。

Bollinger PNVZ16 Champagne

This champagne has medium intensity lemon colour. On nose it gives medium intensity aromas of lemon, chalk, steel, green apple and trace of toasted bread. Dry with medium acidity and alcohol, quite full bodied and creamy mousse. On palate it gives medium intensity flavours of lemon, red apple, wet stone, yeast and touch of nuttiness. Longer than medium length with citrus peel finish. (90) Interesting palate.

家陣都唔知係咪潮流,個個人都造到D香檳爽爽口口咁。BOLLINGER 呢個系列一早已經知係咁,但係有時真係懷念佢舊時的產品。這個以BOLLINGER來說是中規中矩的,唯一要讚的是酒在口中酒味有一些變化,幾有趣,可口的香檳,但現在PN15比較好一點。

This dry champagne has medium intensity lemon green colour. On nose it gives medium intensity aromas of apple, lemon, mineral, limestone, bread and chalk. Quite acidic with medium alcohol and body. Creamy mouthfeel with over medium flavours of bitter lemon, chalk, mineral and trace of toast. Longer than medium length with lemony finish. (91)

明顯地少了點以前 KRUG NV那種老酒味,這樣有版本號碼的 NV 較清爽,多了些清新,少了些醇厚。果味及礦物味更突出,酒酸的性質也較銳利,公整而爽朗,中上水平,但我個人還是較喜歡舊的NV。

This dry champagne has medium intensity lemon green colour. On nose it has pronounced level aromas of lemon, floral, steel, mineral, apple and touch of peach. Medium acidity and alcohol, quite full bodied with creamy mouthfeel. On palate it has over medium intensity flavours of red apple, honey, peach, steel and mineral. Fairly long lemony finish. (93) Ripe and rich fruit on palate.

CRISTAL近年的酒果味越來越趨向成熟果感似的,這酒亦不例外,攪到可以早喝一些,不知是不是一個好處。酒很可口,酸度比起已往的CRISTAL低了點,但亦醇了點。酒味的強度不及香氣,餘韻亦算長,不錯,亦很討好。

This champagne has medium intensity lemon green colour. On nose it gives pronounced aromas of green apple, lime, pear, wet stone and mineral, clean and sharp. Dry with medium acidity, a bit sharp in nature. Medium bodied and alcohol with creamy mousse. On palate it has over medium intensity flavours of lime, apple juice, steel and touch of mineral. Fairly long length with lemon juice finish. (92) Clean and good acidity, fresh but need time.

爽朗的,酒酸的性質有點點削,希望時間會令其圓潤一點,但現在飲不影嚮佐餐。酒的味說仍是以果味為主,偏向清爽類的,也是需要一些時間等待發展,酒的質素不錯,餘韻亦長,可以陳年一下。現在用作餐酒較理想一些。

This dry champagne has medium intensity lemon colour. On nose it has medium intensity aromas of lemon, honey, white flower, limestone, and peach. Quite acidic with medium alcohol and bodied. Creamy mouthfeel with medium intensity flavours of bitter lemon, honey, stewed apple and caramel. Longer than medium length with citrus finish. (90)

發展不錯,成熟的香檳。酒的力度一般,酸度足,餘韻比想像中長,交到貨的。酒味較酒香發展得快,味道較熟,絕對啱飲。除非想陳到變歴史收藏,否則盡情喝吧!

1969 J. de Telmont Heritage Champagne


Quite deep lemon colour with medium noses of honey, lemon, wet stone, peach and caramel. It is dry with over medium intensity acidity, full bodied and not much mousse, fully developed. On palate it gives quite intense flavours of lemon, honey, caramel and trace of straw, peach and limestone. Medium length with peachy finish. (89) Good stone fruit, it is a white wine now.........

變成一枝白酒了,不過仍不至於老去。酒的發展已經完全了,十分成熟。酒力不錯,沒有了香檳的氣泡,換來的是豐厚的酒體,另有一番滋味。酒的複雜性不算很出眾,餘韻尚算合格,不錯。喝的是歷史,是另一種品飲和欣賞的角度。

難得的酒,也是難得的品飲經驗。似乎2008年的香檳是一個頗特別的年份,給我的感覺是可以早一點飲用。這感覺可能是來自酒的酸度感。試過幾個不同酒莊,他們的香檳酸度一點也不削,再加上成熟甜美的果感,令人愛不釋口,不斷咁飲。這酒也是一樣。酒的表現全在中上,礦物感在口中較為突出,好好喝的酒。

Medium lemon green colour and medium noses of lemon, red apple, steel, mineral and bread. Quite acidic but soft in nature, medium alcohol and bodied with firm structure, nice expression of pinot noir. Over medium intensity flavours of bitter lemon, apple, mineral, steel and touch of honey. .Fairly long length  with bitter lemon finish. (92) Fresh.

可以一個字去形容,說是鮮!酒很鮮爽,造工可以說是飲得出咁公整,口感更有著接近標誌性的 BDN 感覺,拎去考酒試用一流(一笑)。酒的整體表現中上,餘韻算長,好喝,是一枝很稱職的香檳,不論用作佐餐或剩飲,頭盤或甜品也可。
