Medium alcohol and bodied. Creamy mouthfeel. On palate it gives quite intense flavours of lemon, apple, limestone, mineral and pear. Longer than medium length with lemon and mineral finish. (94)

好酒,條理分明,味道清澈、酒力強勁,在陳年感覺與鮮爽口感中平衡有致,喝得出酒的工藝,好好喝,是一支高水準的酒品。如果一定要彈的站可能是餘韻,希望可能長一點⋯⋯

2008 Dom Perignon Rose

Medium intensity salmon coloured dry rose champagne with quite intense noses of strawberry, lemon, red apple, tomato bread, steel, wet stone and chalk. It is quite acidic but refreshing. Medium bodied and alcohol, creamy mouthfeel. On palate it gives over medium intensity flavours of red cherry, tomato, red apple, limestone and citrus peel. Longer than medium length with red sour cherry finish. (95) Fresh and crisp, good fruit.

感覺清新,果味新鮮,有點像剛剛從樹上摘下來的感覺,而且在果味背後還有一定的礦物感,很平衡和有層次的一支酒。酒的酸度足而且很醒神,不會削口。泡沫豐富,餘韻算長,但比想像中短了一點,可能酒在口中的表現令我有更高的期望,是一支很好看的香檳⋯⋯

一支二十年的香檳,居然有這樣新鮮感,很難得。清澈、明亮、條理分明,酒力強而有一定複雜性,加上長長的餘韻,是一支佳釀。那種鮮爽的果味在口中相信會令人難忘。好好喝。

This dry champagne has medium intensity lemon green colour. On nose it has pronounced level aromas of toasted almond, honey, lemon, floral, limestone and touch of peach. Medium soft acidity with medium alcohol and quite full bodied. On palate it gives quite intense flavours of lemon, chalk, honey, and trace of limestone. Fairly long length with lemon finish. (93)

香氣強勁澎湃,亦有複雜性,酸度比較柔和一點,並沒有以往那麼重蘋果酸的感覺,酒在口中的複雜性低了一點點,但長長的餘韻提醒你他的質素,很好喝的。現在喝似乎還需要透氣一會。

This champagne has medium intensity lemon green colour. On nose it gives pronounced aromas of green apple, lime, pear, wet stone and mineral, clean and sharp. Dry with medium acidity, a bit sharp in nature. Medium bodied and alcohol with creamy mousse. On palate it has over medium intensity flavours of lime, apple juice, steel and touch of mineral. Fairly long length with lemon juice finish. (92) Clean and good acidity, fresh but need time.

爽朗的,酒酸的性質有點點削,希望時間會令其圓潤一點,但現在飲不影嚮佐餐。酒的味說仍是以果味為主,偏向清爽類的,也是需要一些時間等待發展,酒的質素不錯,餘韻亦長,可以陳年一下。現在用作餐酒較理想一些。

酒力強勁,酒味亦複雜 ,口感豐富得來酸度又足,令酒的鮮活性保留而又不削,難得的釀造技巧,想信仍可再發展一下,酒現在喝已經很好,再陳一下應該會有另一層次的品飲感受。

Medium pink colour with medium intensity of wild strawberry, tomato, red cherry, apple and touch of steel and chalk. Dry with medium acidity, alcohol and bodied with fairly intense flavours of red apple, wild strawberry, limestone and chalk. Quite long aftertaste with red cherry finish. (92).

相對簡單了一點的酒,但紅果感覺很出色,後勁強,特別是礦物感,比酒香強烈。餘韻也算長。這酒在口中的表現比酒香更好,非常可口。

質素高,平衡公整的, 酒香算強而複雜,餘韻亦長,酒味的複雜性也很好,只是強度低了些,好喝。是一枝令人覺得有一定陳年而又發展得很平均的酒。

19年酒但新鮮得接近神奇,酒香很出色,強、複雜、亦令人感到新鮮清爽。酸度足而又沒有削的感覺,口感綿餘韻長,酒在口中味道複雜性下降了一點,而果味亦成熟了一點,很好喝,是有一點令人驚喜的好喝。

Medium gold coloured with quite intense noses of lemon, fresh apple, steel, cucumber, chalk and pear, quite fruity. It is dry with medium acidity and bodied. Medium alcohol and creamy mouthfeel. The flavour intensity is quite high with lime, apple, limestone, cucumber with fairly long length of lime finish. (92) Fruity and fresh.

可口,鮮鮮爽爽,果味感覺很清爽的,不是甜甜熟果的感覺,口感豐滿,但個人略嫌酸度低了一點點,餘韻算長,整體不錯,喝得很舒服的。

Medium lemon green coloured with quite intense noses of lemon, honey, mineral, wet stone, ripe red apple and touch of steel. It is dry but quite acidic, medium bodied with creamy mouthfeel. On palate it has quite intense flavours of lemon, apple, ripe pear, limestone mineral, steel. Fairly long length with honey lemon finish. (93) 20 years old but fresh, good flavour balance.

味道很好 ,好在酒的香氣和味道平衡,沒有那一類特別突出而蓋過其他,酒力及酒味也強,有一定複雜性而且餘韻亦長,有齊一切好酒的因素,工十年有多的酒仍有這酸度和鮮爽感,正。

A medium lemon gold champagne with quite pronounced aromas of lemon custard, stewed apple, honey, limestone, toffee and touch of mineral. It is dry with medium acidity and alcohol, quite full bodied with creamy mouthfeel. On palate it gives medium flavours of lemon, stewed apple, chalk, honey, ripe pear and caramel. Fairly long length with honey lemon finish. (92) Well performed and smooth.

陳年香檳的清爽感是有點缺乏的,但取而代之的是豐滿結實的口感,酒體柔順 ,餘韻長但不太強,一陣陣滲出來的,令人回味。酒當然發展成熟,層次亦分明,好飲,是一枝會令人留下印象的酒。

It has quite high acidity, medium alcohol and medium bodied, creamy mouthfeel.  Over medium intensity flavours of lime, lemon peel, green apple cider and touch of bread. 酒香的成熟感比酒味高,但仍貫徹著酒的清爽風格,沒有太大的二次發酵感。酒的酸度高,清爽醒胃,但仍令人有滿滿的口感,綿細的泡沫功不可沒,複雜性不太強,餘韻長,幾好飲。

Medium intensity onion skin coloured dry champagne with fairly high intensity aromas of raspberry, strawberry, rose, mineral, and touch of honey bread. Quite high mouthwatering acidity, medium bodied and medium alcohol, creamy mousse. The flavour intensity is quite high too with flavours of rose, raspberry and touch of citrus and bread. Barely longer than medium length with raspberry finish. (91)

這粉紅香檳的紅果味很出眾,甚至可以說主導了整枝酒的味度。酸度足,口感相對同牌子不同年份的豐厚。酒在口中複雜性大降,簡單了點,餘韻合格。不錯的香檳,但不算很出色。

A medium lemon coloured dry champagne with over medium noses of ripe pear, peach, white flower and touch of cream soda and yeast. Medium acidity, alcohol and bodied with creamy mousse. The flavour intensity is over medium with flavours of green apple, bitter lemon, pear and mineral. Longer than medium length with bitter lemon finish. (91)

04年的香檳可以飲。這酒以 Dom Perignon 來說算不錯,但不算出色。酒香複雜性差了點,酒力尚算強,餘韻不錯,中上的酒。

清清爽爽的,酸度十足,酒香複雜性比酒味好,酒在口中的果味成熟度亦比酒香低,餘韻算長,不錯。

1996 Dom Perignon Oenotheque

A medium lemon green coloured dry champagne. On nose it has fairly high intensity aromas of toast, honey, red apple with touch of mineral, yeast and bread. Fairly high intensity acidity with medium bodied and alcohol. Creamy mousse and fairly long length with citrus finish. The flavour intensity is quite high with flavours of lime soda, citrus, floral and touch of mineral, green apple and honey. Refreshing. (93)

幾適飲,但開瓶後要透一透氣後更好。力度強,複雜性足,餘韻亦長,這都反映了這香檳的質素,。口感豐,氣泡在口中活躍跳動似的,頗有活力,好飲。

Deeper than medium lemon colour with slightly over medium intensity aromas of ripe apple, honey, hazelnut, caramel, lemon zest and touch of camomile. It is dry with medium zesty acidity, medium alcohol and fuller than medium bodied. Long and persistent bubble and creamy mousse. On palate it gives fairly high intensity flavour of lemon, flower, honey, butter, caramel and touch of musky. Quite long length with honey citrus finish. (94)

好味道。有一定複雜性及酒力,餘韻亦很不錯,酒亦已發展成熟,90年所謂的 PERFECT TEN 不無道理。

A medium lemon green colour champagne with fine and long bubbles. On nose it has fairly pronounced aromas of citrus, ripe pear, apple, bread, touch of caramel and autolysis. It is dry on palate, with quite high acidity and medium alcohol. Medium bodied and creamy mousse. A touch of tannin detected. On palate, it gives quite high intensity flavours of citrus, pear, apple, bread, touch of malt and caramel. Barely over medium length with lemony finish. (94)

優雅的香檳,酒香清爽澎湃而有一定複雜性,口感清爽而有一點結構(可能我感到一點點像單寧的感覺),酒品仍維持到一定的強度及複雜性但較為一致。餘韻合格但沒有想像中咁長,好好味。

2000 Dom Perignon

Medium lemon green in colour. It has small and long bubbles with medium noses of apple, bread, yeast, and toast. On palate, it is dry with medium acidity, alcohol and body. Quite high intensity flavours of apple, lemon, bread and citrus peel. Medium length with citrus peel finish (90). Some complexity with balanced structure. Quite a standard vintage champagne.

以年份香檳來說, 這是一枝平平穩穩的香檳. 現在亦應在適飲期了. 清爽得來又不至於覺得酸. 口味雖不是十分複雜但有一定的果味及後發酵的味道.
