2008 Salon

Medium lemon green colour with pronounced aromas of lemon, yeast, ripe pear, apple juice, steel and mineral, very fresh and fruity. It is dry with medium refreshing acidity, medium alcohol and bodied. Creamy mousse with touch of steely mouthfeel. On palate it gives quite intense flavours of lemon, steel, ripe pear, apple, mineral and wet stone. Fairly long length with lemonade type finish (94)

難得的酒，也是難得的品飲經驗。似乎2008年的香檳是一個頗特別的年份，給我的感覺是可以早一點飲用。這感覺可能是來自酒的酸度感。試過幾個不同酒莊，他們的香檳酸度一點也不削，再加上成熟甜美的果感，令人愛不釋口，不斷咁飲。這酒也是一樣。酒的表現全在中上，礦物感在口中較為突出，好好喝的酒。

1971 Salon

This dry champagne has medium intensity lemon colour. On nose it gives quite intense aromas of stewed apple, honey, caramel, lemon custard and trace of steel. Surprisingly quite acidic with medium alcohol and full bodied. Creamy and going to smooth white wine type mouthfeel with intense flavour of stewed apple, honey, lemon, steel and caramel on palate. Long length with honey lemon finish. (93) Good development, unlike its age.

出奇的年青，酒味當然已經發展成熟，從香味的描述已看到酒香已和諧地混合。酒的酸度出奇的好，不是很酸，但以50年的酒仍有這酸度是很有活力的。餘韻長，亦展現酒的力量和質素。這酒有成熟香檳的表現而又有一定的活力，令人印象深刻，這表現相信 ex-domaine 有直接影嚮。

1999 Salon

Medium lemon green colour with fairly pronounced aromas of lemon, honey, chalk, cream, red apple and touch of peach. It is dry with medium acidity, medium alcohol and quite full bodied. Creamy mouthfeel with fairly long length of honey lemon finish. The flavour intensity is quite high with flavours of bitter lemon, chalk, wet stone, apple and steel. (92)  Good mineral on palate

礦物味很不錯。酒的強度很好，亦有一定的複雜性，餘韻亦算長，中上的表現。這酒已喝過幾次 ，這次的狀態是最喜愛的，特別是酒在口中的礦物感，好味。

 

1996 Salon

A medium lemon green colour dry champagne with quite intense noses of lemon, chalk, wet stone, green apple, honey, and touch of caramel. Quite acidic but refreshing, medium alcohol and rather full bodied. On palate it has pronounced level of lemon, limestone, apple, honey and trace of steel and chalk. Fairly long length with lemon honey finish. (94)

如果我說這酒還很年輕不知算不算誇大，但這酒的感覺由果味到酸度都有這印象。酒力強勁，貫徹其應有的複雜性及口感，不大有成熟香檳的感覺，長長的餘韻，仍有一定發展空間的，好酒，還可陳年，甚至是須要陳年一下。

1997 Salon

Medium lemon green coloured with medium noses of lemon, honey, red apple, chalk, white flower and cream. Medium acidity and alcohol, medium bodied with creamy mouthfeel. On palate it has over medium intensity flavours of bitter lemon, red apple, honey, chalk and trace of peach. Fairly long length with bitter lemon finish. (92)

乾淨的口感，但不是說它簡單。酒在口中很綿，白中白的性格表露無遺。酒香較酒味弱，味道一致，酒在口中表現有一些成熟感，幾好喝。

2004 Salon

Medium lemon green coloured with pronounced level aromas of lemon, ripe red apple, floral, mineral, cream and touch of peach and honey. Dry with quite high refreshing acidity, medium alcohol and bodied. Creamy mousse. On palate it gives quite intense flavours of lemon, apple, mineral, chalk and touch of steel. Fairly long length with lemon finsih. (94) Delicate.

酒的味道複雜而且強烈，果香覆蓋範圍廣闊，口感豐富，酸度及酒味高度平衡 ，餘韻亦長，是一枝很好的作品，礦物味及果味也互相輝映，在口中表現精彩，很好喝，現在飲已經很好，再放一會可能更有發揮。

較清爽的口感，酒力強烈，果味較偏向清淡的方向，礦物味較突出，餘韻亦算長，好喝。這酒的味道很清晰乾脆，層次分明，以這酸度來看還可陳放多一段時間，較喜歡酸削一點的人會很喜歡這酒的。

Creamy mouthfeel too. On palate it gives quite intense  flavours of lemon, ripe apple, honey, mineral and trace of cream and stone. Close to long length with honey lemon finish. (94) Very enjoyable.

比想像中成熟甜美，酒力強勁，有複雜性及田土風格，再加上教科書式的BDB表現，完全展示出這酒跟酒標所描述的。交足101%的貨。好好喝。這酒亦改變我對2002年的酒的成熟度，似乎比我想像可以早一點飲，現在飲好喝，再放也可。

2007 Salon

Medium lemon green colour with quite intense aroma of lemon, red apple, honeysuckle, cream and touch of steel and chalk. It is dry but quite high acidity, medium bodied and alcohol, creamy mouthfeel. On palate it gives quite intense flavour of lemon, honey, cream, apple, chalk and steel. Fairly long length with lemon candy finish. (94)

頗出色的作品，酒力強勁餘韻長，口感綿綿，果味出眾亦有一定礦物感支援，工整企理，中上質素的表現。現在飲酸度高了點點，但已經比想像中低，因此我亦估計這酒可以早一點進入適飲期。喜歡較酸一點的朋友甚至已可以飲，當然陳年多一下會有更多發展。好喝。

2006 Salon

A medium intensity lemon green colour dry champagne with quite high intensity aromas of lemon, chalk, pear, ripe apple and wet stone, clean, clear and precise. Quite acidic with medium bodied and creamy mousse. On palate it gives quite intense flavours of lime, chalk, pear, green apple and trace of mineral. Fairly long length with citrus finish. (92) Still have a long way to go.

豐滿綿綿的口感很易令人滿足的一枝香檳。酒的強度足，不論酒香和酒味也是。味道的層次分明，清晰、直接、準確的表現泥土礦物感，好酒。酒仍可陳年，但這一枝感覺可以早一些飲用，可能是年份問題吧。

2002 Salon

This champagne has medium intensity lemon green colour. On nose it has quite high intensity aromas of lime, stone, mineral, cream soda and touch of bread. Quite acidic, medium alcohol and bodied with creamy mousse. The flavour intensity is quite high too, with flavours of lime, green apple, wet stone, mineral and touch of yeast. Long length with citrus and mineral finish. (93)

礦物味很豐富，清香爽朗的。酒力強勁，亦有著白中白的綿綿口感，長長的餘韻。現在飲可以感受到酒的功架，但再多放一下相信會有更成熟複雜的口感。

2002 Salon

Medium lemon green colour with quite pronounced intensity aromas of lime, honey bread, cream, mineral, white flower and touch of steel and chalk. It is dry with medium acidity, a bit sharp. Medium alcohol and fuller than medium bodied. Creamy mouthfeel with quite pronounced flavours of bitter lemon, steel, mineral and touch of honey and yeast. Long length with lemon cream finish. (95) Very creamy.

口感很綿，酒仍新，但潛質開始展現。酒力強，亦複雜，假以時日會更出色，餘韻長，酒味在口的複雜性仍有發展空間。儲下貨，我相信這酒過多十年都不會令人失望，現在飲是可口的，但遲些飲會有更好享受 。

1997 Salon

A medium lemon green coloured champagne with quite pronounced aromas of apple, biscuit, toast, white flower and bread. It is dry with quit high refreshing acidity. Fuller than medium body and medium alcohol. Creamy mousse with tiny bubbles and long persistence. On palate, it gives quite intense flavours of ripe apple, biscuit, toast, and lime. Very long length with citrus finish. (93) Complex and well developed, it has potential for further aging, as evident from its acidity.
