Medium acidity and alcohol, quite full bodied with smooth tannin. On palates it has quite intense flavours of rose jam, red plum jam, red berry, mushroom and licorice. 仍然是一貫醬果的味道和感覺,這枝酒的香料味很出色,像是一個香料架一樣。酒力強餘韻長,好酒一枝。這個莊的造法雖然大大増加了酒吸引大眾的能力,但減少了酒的田土獨特感覺,真係有點難取捨。

2007 Romanee St. Vivant, Domaine Sylvain Cathiard

This dry red wine has quite deep intensity ruby colour. On nose it has quite intense aromas of candied strawberry, rose, mint, flower garden and trace of wormwood and toasted herb, quite elegant. Medium acidity and alcohol, quite full bodied with medium intensity tannic, a touch of greenness though. On palate it gives quite intense flavours of rose, red cherry, vanilla, sandalwood, mint and earth. Long length with rose finish. (93)

這種幽香的酒香真的引人入勝。酒的香味充滿花香之餘更有甜甜的果感,十分吸引。酒的口感優雅,餘韻長,好好飲,連香料味也是充滿幽香感,正。要彈的只有單寧有點點青,否則冇得頂。

A deep ruby coloured dry red wine with intense aromas of rose, red plum candy, berry jam, vanilla, licorice, cinnamon, smoke and touch of menthol, very complex nose. Medium acidity, alcohol and bodied. The tannin is soft and fine grained at medium level, round mouthfeel. On palate it gives quite intense flavours of rose jam, red plum candy, vanilla, cabbage, licorice and sweet spice. Close to long length with red plum finish. (94) Delicious

再次確定2011年的布根地是比想像中好。酒的酒力、複雜性、口感、餘韻全屬出色的表現。品飲時是會感受到酒的優雅。這年份的評價真的是低估了。好好喝,相信再陳年會更精彩。

A deep ruby dry red wine with quite intense noses of rose jam, red plum, red berry, vanilla, licorice, mushroom, earth and cabbage. Dry with medium acidity, alcohol and quite full bodied. Medium tannin and soft. On palate it gives over medium intensity flavours of red plum, rose jam, red berry candy, vanilla and damped wood. Fairly long length with red berry candy finish. (92) Touch of bitter at the back, good candied fruit.

醬果的香氣對這酒來說已經是預期之內。這似的更有點像糖果的感覺。酒力強而有其接近標誌性的複雜性,濃厚而再加多一點甜蜜,很討人喜愛。酒的餘韻長。各方面的味道組合也有,是一件漂亮的作品。唯一對品飲有點影響的是酒的單寧。酒還新,可以陳年一下,會有更有趣的品飲感受。

1971 Salon

This dry champagne has medium intensity lemon colour. On nose it gives quite intense aromas of stewed apple, honey, caramel, lemon custard and trace of steel. Surprisingly quite acidic with medium alcohol and full bodied. Creamy and going to smooth white wine type mouthfeel with intense flavour of stewed apple, honey, lemon, steel and caramel on palate. Long length with honey lemon finish. (93) Good development, unlike its age.

出奇的年青,酒味當然已經發展成熟,從香味的描述已看到酒香已和諧地混合。酒的酸度出奇的好,不是很酸,但以50年的酒仍有這酸度是很有活力的。餘韻長,亦展現酒的力量和質素。這酒有成熟香檳的表現而又有一定的活力,令人印象深刻,這表現相信 ex-domaine 有直接影嚮。

Medium lemon green colour with fairly pronounced aromas of lemon, honey, chalk, cream, red apple and touch of peach. It is dry with medium acidity, medium alcohol and quite full bodied. Creamy mouthfeel with fairly long length of honey lemon finish. The flavour intensity is quite high with flavours of bitter lemon, chalk, wet stone, apple and steel. (92)  Good mineral on palate

礦物味很不錯。酒的強度很好,亦有一定的複雜性,餘韻亦算長,中上的表現。這酒已喝過幾次 ,這次的狀態是最喜愛的,特別是酒在口中的礦物感,好味。

A medium lemon green colour dry champagne with quite intense noses of lemon, chalk, wet stone, green apple, honey, and touch of caramel. Quite acidic but refreshing, medium alcohol and rather full bodied. On palate it has pronounced level of lemon, limestone, apple, honey and trace of steel and chalk. Fairly long length with lemon honey finish. (94)

如果我說這酒還很年輕不知算不算誇大,但這酒的感覺由果味到酸度都有這印象。酒力強勁,貫徹其應有的複雜性及口感,不大有成熟香檳的感覺,長長的餘韻,仍有一定發展空間的,好酒,還可陳年,甚至是須要陳年一下。

On palate it has over medium intensity flavours of bitter lemon, red apple, honey, chalk and trace of peach. Fairly long length with bitter lemon finish. (92)

乾淨的口感,但不是說它簡單。酒在口中很綿,白中白的性格表露無遺。酒香較酒味弱,味道一致,酒在口中表現有一些成熟感,幾好喝。

1996 Bruno Giacosa Barbaresco Asili Riserva

Deep ruby coloured with quite intense noses of black plum, road tar, smoke, dates, licorice, dried berry, prune and trace of dust. Dry with medium acidity, alcohol and full bodied. The tannin is ripe and soft at medium level. On palate it gives quite intense flavours of black plum, black cherry, smoke, toast, cinnamon and menthol. Fairly long length with black plum finish. (93) Good complexity

頗複雜的一枝酒,酒香的感覺比酒味濃,但在口中轉淡後又出現另一種味道感覺,很值得讚。單寧成熟而柔軟,餘韻亦長,靚酒的表現。酒味濃厚得來而又保存著品種的特色,是一件很出色的作品。

A deep ruby coloured dry red wine with intense noses of red plum red berry, rose perfume, strawberry jam, earth and wormwood. Medium acidity and alcohol, quite full bodied with medium intensity soft tannin, a bit greenness is detected tho. On palate it has quite intense flavours of red plum, berry fruits, strawberry, wild rose, anise and toast. Long length with red plum finish. (94) Intense yet complex, good development.

令人回味的酒。果味濃淡有緻,香料味也出眾,單寧算柔順,再加長長餘韻,好好喝。要彈的只有年份所引起的一絲青澀的單寧,以及酒味有口中的礦物味小了點。否則會是一枝極品。
