Henri Boillot Fine Sophia

Medium copper coloured with pronounced aromas of caramel, toffee, honey, citrus jam, floral and trace of hazelnut. Water enhances its floralness. It is dry with medium acidity, medium integrated alcohol and quite full bodied. On palate it gives over medium intensity flavours of citrus peel, jammy lemon, nutty, caramel, floral and touch of ginger. Longer than medium length with caramelized nutty finish. (91) quite bulky and bold.

一隻香檳莊造的烈酒有點難以想像，更難想像的是那種醬果及類似焦糖的口味。酒身較厚而且酒味重，酒的強度算不錯了，酒味在口中有一點點變化。這酒雖然沒有干邑那樣醇厚的口感，但因為味道方向重而濃，也令人有些滿滿的感覺，不錯。

2005 Corton Charlemagne, Domaine Henri Boillot

This is a dry white wine with medium intensity lemon colour. On nose it gives quite high intensity aromas of lemon, honey, mineral, vanilla, butter and touch of wet stone. Medium acidity and alcohol with full bodied. On palate it has quite high intensity flavour of lemon, sweet vanilla, honey, and touch of peach and nuttiness. Fairly long length with honey lemon finish (92) Very full, a bit heavy too but with good intensity and flavour.

與04年的一同品飲，這酒比04年更豐厚圓滿，酒力強，亦有一定複雜性，餘韻亦長，好酒來的。酸度亦算維持到，不至令酒失去鮮活性，好飲。

2004 Corton Charlemgane, Domaine Henri Boillot

This dry white wine has medium intensity lemon colour. On nose it gives pronounced intensity aromas of lemon, honey, white flower, chalk, mineral, and touch of cream. Medium acidity, alcohol and full bodied. On palate it gives slightly over medium flavours of lemon candy, butter and mineral. Longer than medium length with honey lemon finish. (91) Full, round, rich but need better complexity.

酒很豐厚而不失酸度，值得一讚。酒香強烈複雜，口感豐滿厚實，餘韻合格有餘，只是酒在口中的複雜性弱了點，不錯的一枝酒，這酒莊的風格水準頗穩定，不錯。

H. Billiot Fils Cuvee Laetitia Brut, Champagne NV

Medium lemon green colour with medium intensity aromas of apple, honey, citrus and touch of bread and cream soda. It is dry with medium acidity, alcohol and bodied. On palate it gives slightly over medium intensity flavours of lemon peel, apple, honey, bread and cream. Fairly long length with honey citrus finish. (92)

工整好飲的香檳，酒的表現在口中比香氣好，餘韻亦長，可是複雜性略為不足，但仍感受到成熟的果味，不錯。

2000 H & Billiot Julie Champagne

A barely medium lemon coloured champagne with medium intensity aromas of lemon, honey, apple, caramel, bread and touch of steel. It is dry with fairly high refreshing acidity, medium alcohol and slightly fuller than medium bodied. Creamy mousse with slightly higher than medium intensity flavours of honey, lime, mineral and red apple. Longer than medium length with honey lemon finish. (91)

可口，也只是可口。香氣是很不錯，上佳的複雜性很吸引人，口感亦好，泡沫豐豐滿滿的，可是酒味在口中的複雜性下降了頗多，是年份問題嗎?(個人認為2000年根本不是香檳靚年，正如08年波爾多一樣)餘韻不錯，所以也是中上的酒品。
