2004 Bollinger Vieilles Vignes Francaises Blanc de Noirs Champagne

Medium lemon coloured with quite intense noses of honey, lemon candy, Fuji apple, caramel, sweet vanilla and touch of coffee. Dry with medium acidity, medium alcohol and full and firm bodied. On palate it gives quite intense honey, lemon candy, almond, chalk and trace of steel and soda. Fairly long length with lemon candy finish. (96) good structure and complexity

精彩。一枝唔甜的香檳但有著檸檬糖的酸甜感覺。標誌性的BdN架構，強烈而複雜的香氣及酒味，再加長長的餘韻，好好味。比較意外的是酒的發展有一定情度，04年酒只是15年，但有些成熟的感覺，但正正是這樣，酒便有齊足夠的香味及酒味範圍。令我覺得幾啱飲。再陳的話是可以的，但我想信會有另一種表現。

2012 Marc Hebrart Noces de Craie Blanc de Noirs Champagne

This champagne has medium lemon green colour. On nose it has medium intensity aromas of lemon, honey, green apple, peach, yeast and touch of mineral. It is dry with over medium level acidity, a bit fuller than medium bodied with medium alcohol and creamy mouthfeel. On palate it has quite high intensity flavour of lemon, lime, wet stone, honey bread, together with fairly long honey lemon finish. (92)

 睇顏色很難看出是 BdN，只有在入口很發覺這酒較硬的結構才發覺這不像一般的香檳。不錯的酒香強度，有清爽感。入口後這酒的質素才顯現出來，酒力及複雜性在口中比酒香好，餘韻亦長，好飲，有點深藏不露的感覺，令人有點驚喜。

Paul Dethune Blanc de Noris Champagne Brut

This sparkling wine has medium lemon colour with touch of pink tinge. On nose it gives pronounced aromas of ripe apple, lemon, pear drop, yeast, mineral and honey, quite complex. It is off-dry with fairly high acidity, medium bodied and creamy mousse. Medium alcohol level and over medium flavour intensity. Apple, citrus, grapefruit and touch of honey and caramel. Barely over medium length with citrus and honey finish. (92) Touch of bitterness at the finish makes it not having an even higher rating.

這枝酒給了我一點驚喜。酒香複雜強勁，口味也足，可惜的是餘韻比想像中短了點。
